Burwood Bole is an unpasteurised cows milk cheese made in a log shape. It is made at Chalke Valley Cheese by myself and matured in my washed rind room in Child Okeford.
Burwood Bole is a semi-hard washed rind cheese which has a slightly firmer texture in the centre. It has lemony undertones and a sweet nutty taste.
Made in a 300g log shape and a larger 5kg ‘trunk’.
